green monster & cauliflower crusted pizza

it's been a while since i shared a recipe on the blog... this is NOT because i haven't been cooking, but because i choose only to share my FAVORITE recipes with you.
that being said... i definitely think you need to give these a try.

after seeing several versions of green monster smoothies floating around pinterest i thought that spinach would taste terrible in drink form i thought 'why not give it a try?' this is my mixture... and i LOVE it.

lori's green monster:
handful of frozen mangos
4-5 fresh strawberries
1 large banana (when they're really ripe and turning brown on the outside, cut them up, put them in a ziploc and freeze them)
couple of handfuls of fresh spinach
2 tablespoons of splenda, or some agave nectar

blend and adjust milk, ice and spinach until you get the desired consistency and color, and ENJOY!

cauliflower crusted pizza:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce and your choice of toppings*
{i used fresh mozzarella, spinach, mushrooms, tomatoes and garlic... i cooked the mushrooms on the stove top in some sherry beforehand}

take a head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. add to food processor and pulse until it looks like grain. do not over-do pulse or you will puree it. place the riced cauliflower into a microwave safe bowl and microwave for approximately 8 minutes (depending on the strength of your microwave). there is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
one large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
pizza crust:
preheat oven to 450 degrees. spray the pan with non-stick cooking spray.
stir together 1 cup cauliflower, egg and mozzarella. add oregano, crushed garlic and garlic salt, stir. transfer to the pan, and using your hands, pat out into a 9" round. brush olive oil over top of mixture to help with browning.
bake at 450 degrees for 15 minutes.
remove from oven. add sauce, toppings and cheese. bake approximately 3-4 minutes until cheese is melted.
*Note that toppings need to be precooked since you are only broiling for a few minutes.

feels like home to me.

since the move, i am constantly being asked how i like it here in athens...
so today, i thought i would address it on the blog. 

the answer is that i LOVE athens!! {and not only because it is the home to my beloved bulldogs.}
the best way i can describe it to you is it just feels RIGHT. you see, the hubs is a small town boy. and i like to think of myself as a city girl. athens is the perfect happy medium. it's small enough that you don't get stuck in traffic every where you go, but big enough so that there's always something to do.

there are a ton of delicious restaurants. and a lot of them are locally owned... not your typical chains. there is definitely no shortage of bars {with 97 to be exact, athens actually holds the title of town with most bars per square mile}.
athens is environmently friendly. our recycling is picked up weekly, and we don't even have to sort it!
it's also very fitness oriented. there are organic stores and restaurants. and no matter the weather, you can always find people out running down milledge. {i like to say it's my sight-seeing spot... for the shirtless men}.

it took me a few months to get adjusted... especially with not having a job {and anything to do all day}, it was tough. but i feel like i am now finding my stride... while i still hope to find a job soon, and have definitely NOT given up on the search, i am content.

recently, my friend laura beth invited me to come with her to a meeting about the cancer auxiliary, a nonprofit organization that she's a part of... and i am so glad i did! the group seems like it is made up of some awesome ladies, and what they're doing is really making a difference. i am excited to get involved and give back!

the hubs and i also have found a good fit with a church and we are loving it... it's not even hard to get out of the bed on sundays! {well... most of the time anyways}. i signed up to volunteer with the babies soon, and am looking forward to getting connected that way.

i have been trying to push myself out of my comfort zone a little bit. sometimes i can be a bit shy, but i have really enjoyed meeting new people. i met kenneth and brandon while celebrating erik's birthday... they're both past football players for georgia... and are good friends to have if i ever need a bodyguard or anything ;) and randomly enough, i recognized a familiar face while at the cancer auxiliary meeting... jeanette {who i knew from gcsu} is also living in athens so we exchanged numbers and went to dinner this week.

i also really like it when my friends come and visit me.
ashley came to spend the day with me today!

athens is quickly becoming home.

we fit here.

and i am happy.

weekend recap.

what a fun weekend! 

friday night we cooked out to celebrate erik's birthday... {and for the record... i did not eat one of the cupcakes i made}... although they were delicious, from what i hear. i sure hope so, because they were a pain in the rear to make. food coloring and i do NOT get along. i turned everything in the kitchen {including myself} green.
i digress....
we had a chill get together and then headed downtown for some drinks. the hubs got off work at 11:30 and joined us... my fave was 8e's bar {yes, they play only 80's music which is so fun and makes me feel super old at the same time!}

saturday we got some lunch and headed to the theater to see the hunger games!
i found it to be pretty true to the book. i also thought they did a good job with the casting. i loved jennifer lawrence as katniss. and lenny kravtiz as cinna, who was one of my favorite characters in the book {though i did think they could've done him up in true capital fashion a bit more}. as always, i thought the book was better... but i was impressed with the movie. cannot wait for the next one!!

sunday we went to church and lunch then the hubs cleaned the whole downstairs... floors and all {i know, i hit the husband jackpot} while i did all of the laundry and cleaned upstairs. after that we walked the same path we did on friday {we found out it is 2 miles... so farther than i thought. yay!} and then we cooked a healthy dinner at home {without recipes which is a triumph in itself in our household}... everything actually turned out delicious!

i am so thankful to have had the hubs at home for several weekends in a row.
