10 day you challenge: nine loves.

i am finally back with the 2nd part of my 10 day challenge posts... sorry it has taken so long!
(if you missed my first post, here are my ten secrets)

as you may recall, the hubs and i will soon be moving to athens, which is about an hour and a half from where we live now.

thankfully, we have amazing friends {aaron and holly} who currently live in athens and are so, so sweet to let my hubby stay with them several nights a week so that he doesn't have to spend 3 hours in the car commuting to and from work every day.

but i must say, i am already OVER this transitional phase. {patience is definitely NOT my strong point}


and i am super duper STRESSED.

of course, not seeing my man every day sucks major. i still very much like him and enjoy his company in the evenings.

while i am currently working in milly, i am looking for a job {which alone is enough stress to drive a person crazy}and a replacement for myself at my current job.... and a house to rent in athens...

then we have to tackle the task of actually packing up our house and take on the whole moving thing...

so far, nothing has panned out... despite my efforts, i still have no new job, no replacement, and no house.

my face is reacting to the stress. and i am not sleeping well, therefore my usually-squinty eyes are sporting a puffy look and i am thisclose to officially being a sick person. {its not a glamorous thing, people}.

but i am so, so ready. i NEED this change. i am really excited about the next chapter in our marriage. for {hopefully} a job that i really enjoy and a new house to arrange and decorate.

{we plan on buying in the next year, once we make sure of WHERE we want to purchase and all that jazz}.

so for now, i will do my best to CHILL OUT and perserve. i know everything will fall into place. but as i said, i am naturally not a patient person.

its okay thursday

Its Ok Thursdays

it's okay...

... to be in a blogging funk... and then spend half a day writing when i finally feel inspired. (im hoping thats what happens this weekend, anyways)

... to drool over horrible-for-you, calorie-packed food on pinterest while you're trying to eat healthy.

... to turn up the air so i can enjoy a pumpkin spice latte.

... to splurge on cool weather workout attire... i'm pretty sure its a fact that if you have cute clothes, you're definitely more motivated to workout.

... to text the hubs baby names randomly even though im not (nor planning on soon becomming) pregnant.

... and keep a list of hubby approved baby names on my iphone.

... to miss my long hair. only 2 months after cutting it.

... to be packing up the house already... even though we haven't found a new place to live yet.

living for the weekends.

on friday the hubby, in-laws and i flew to memphis for the weekend... unfortunately we had a three hour flight delay and ended up spending way more time than expected in the airport... but we got to memphis in time to settle in the hotel and have some dinner. we stayed at the hampton inn downtown so we were able to walk most everywhere, which was nice because the weather was fabulous!

the first night we ate at the majestic grill. unfortuntely, i didnt get any pictures of the restaurant but it was so cute and the food was delish! i had grilled mahi mahi, with mashed potatoes and green beans... and their spinach dip was the best ive ever had (and that is a tough title to hold!)

saturday we headed to oxford (about an hour and a half trip from memphis) for the georgia/ university of mississippi game. we had such a great time! (and georgia won, so thats always a plus!)

after the game we went back to memphis and went out for a seafood dinner at pearls oyster house... (fun story: after we sat down, i recognized some guys across the restaurant. and greg and i realized it was paul and his brother jd from flip this house! not really celebrity status, but kinda exciting!)

sunday before our flight, we did our own little highlights tour of memphis... we drove across the mississippi river (into arkansas) and went to see the lorraine motel, the famous spot where martin luther king jr. was shot and killed in 1968. it is now part of the civil rights museum (which was not open). but it was kind of surreal to see the balcony where MLK was and window where the shots were fired from.

then we drove by graceland on our way to the airport... graceland is the home of elvis presley. we didn't have time to tour the house, so we just stopped and took a couple of pictures from the street.

it was a great weekend!

awkward & awesome

  • wearing something close to a costume of a well-known character and feeling lame all day (you know... red and white polka dots= minnie mouse... or in my case, black skinnies and black top= sandra dee from grease)
  • sending multiple requests to people on linkedin (business related social networking site) before realizing i was signed in my husbands name, not mine. oops.
  • coming out of target and completely forgetting where you parked... its a big parking lot to be wandering around. (i set off my car alarm and found bbea in no time)
  • feeling like you have been beaten after getting a massage. isnt the purpose relaxation and to relieve tension/stress? im not sure which i prefer: knotty or sore shoulders from beating the knots out.

  • we're going memphis this weekend for the georgia/ole miss game in oxford. so excited!
  • the hubbster is really liking his job. i cant wait to find one myself and make the move!
  • the cooler weather we've been having. the hubby and i walked to dinner this past weekend and it felt fabulous!
  • my new old fan! my daddy restored it for me! its a 1930's GE and its currently making my office pretty at work :)

10 day you challenge: ten secrets.

ten secrets:

1. i am super self conscious when i first meet people. i always replay the conversations in my mind.
2. i hate vaccumming and ironing. SO much. (if it werent for my skills in the kitchen, i'd be a useless wife... ha... but seriously.)
3.  i wish i could say i was a cute-matching-set-pj kinda girl.... but im really a slouchy-t-and-undies type.
4. we almost never make the bed. unless we're expecting company.
5. there are empty picture frames everywhere in my house (or if they're not empty they have the model family pictures in them)... i buy picture frames ALL the time but im awful about printing pictures.
6. some 3d ultrasound pictures weird me out. (preggo-mommas don't take offense... im sure your baby will be the cutest thing of life when they get here!)
7. i always double check my phone when belting out my fave songs on the radio... im afraid im going to butt-dial someone and give them a good laugh as they catch me singing along.
8. i am a really messy cook. and i use about 25 paper towels every time i make something.
9. i dont like to repeat outfits. this does not mean i dont wear my clothes more than once, i just TRY to wear them different ways or at least with different accessories.
10. i do not like to walk on drains/sewage. if you pay attention while walking with me, i will do my absolute best to avoid them. (my friend claire tells me i will not like DC b/c of this).

lemon chicken orzo soup and sweet potato biscuits

my hubbster started his new job yesterday. we were both pretty anxious about how it would go. i thought about him all day and wanted to be a good wifey and make a yummy dinner when he got home since i was sure he'd be a hungry boy when he got home.
one of my fave panera bread's soups is their lemon chicken orzo. so when i found this recipe on pinterest that is originally from  good life eats, i couldn't wait to make it! the original was a little complicated, so i simplified it a bit by buying rotisserie chicken at kroger instead of cooking the chicken breasts myself.

1 rotisseree chicken (i used the herb flavor)
1 tbsp. olive oil
1 yellow onion, diced
2 cloves garlic
1/3 cup white wine
3 carrots, sliced into rounds
7 cups chicken broth
1/2 - 3/4 cup orzo pasta, uncooked
3 egg yolks
3 tablespoons fresh lemon juice
salt and pepper, to taste
2 tablespoons fresh parsley, minced
1 1/4 teaspoon fresh thyme
2 - 3 large handfuls of fresh baby spinach, chopped
1 sliced lemon
Add 1 tablespoon of olive or canola oil in a large pan on the stovetop. saute the onion over medium- high heat until golden and tender. add the garlic and saute for another minute. 
add the white wine and cook for 2 minutes.
Stir in the broth and carrot. bring to a boil.
Meanwhile, whisk the egg yolks and lemon together. add 1 cup of hot broth oven very slowly to the egg yolk mixture, whisking as you pour.
add the mixture to the pan
transfer mixture to the crock pot and stir in the orzo and chicken.
cook for a couple of hours, giving he ingredients time to fuse together. when the pasta and carrots are tender  and just before serving, toss the lemons in and season to taste with salt and pepper. add the thyme, parsley, and spinach.
serve immediately.

and since im on a sweet potato kick... i had to find a way to incorporate them in the dinner, too!

again, i simplified (or maybe just didnt exactly follow) martha's recipe...

1 3/4 cups all-purpose flour, plus more for kneading and shaping
2 tablespoons light-brown sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
butter, butter and more butter
3 sweet potatoes
lite maple syrup
1/3 cup buttermilk

peel and cut sweet potatoes into 2-inch chunks. in a large saucepan, cover potatoes with water. bring to a boil; cook until tender, about 15 to 20 minutes. drain; puree in food processor, with 2 tbsp. melted butter and syrup. 
make the dough: in a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. cut in butter until mixture resembles coarse meal, with some pea-sized lumps of butter remaining. in a small bowl, whisk together sweet potato puree and buttermilk; stir quickly into flour mixture until combined.
shape the biscuits: if dough is too sticky, work in additional flour. shape into a disk. this is where i did not follow directions properly...( if you want to, check out martha's recipe)

i shaped mine (using my hands) and baked them for 15 mins...i'd check them at 10, just to make sure... since mine were a little on the large side ;) then i took them out and brushed them with more butter/syrup, baked them another 10 mins and then stuffed my face.

 and yes, you should be impressed by my snazzy presentation on the paper plate :)

... to wear exercise attire with zero intention of actually working out. 

... to try to find a way to incorporate sweet potatoes into almost every dinner lately. (cannot.get.enough)

... to change into my pjs the minute i walk in the door from work.
... to not wash my jeans until i spill something on them... or they're so stretched out i can no longer find my rear end.

... to do my makeup on the way to work because regis and kelly sucked me in and im running late.

... to wear sunglasses as big as my face (that way i don't need to apply sunscreen, right?)

... to stay in my pjs all day on sunday catching up on emails, blogging and job searching.

... to wear boots when its pushing 90 outside because i CANNOT wait to break out my fall wardrobe.

... to be genuinely concerned about who is going to take my pictures for wiww now that the hubby is working out of town.

wiww makes a comeback.

im (finally) back with another what i wore wednesday post.
the truth is, i just haven't been excited about my outfits. and i haven't been feeling very pretty lately... therefore i have not taken any pictures.
BUT then we got a hint of fall weather this week and i got excited again.
it has warmed up again, but its not near the stiffling temperatures we were experiencing.

the pioneer woman: black heels to tractor wheels {a book review}

you may have heard of ree drummond
 she's a very well known blogger.
and an amazing cook. (i definitely want to get my hands on her cookbook!)

woman does it all.
but honestly, i was not sure about this book.
... until i started reading it.

i've never been much of a country girl or a cowboy lover... and in fact, im scared of most farm animals. but i actually really enjoyed this story of an "accidental cowgirl".

heres what amazon has to say:
drummond shares the story of her courtship and marriage to her husband, whom she refers to as marlboro man. though drummond grew up in oklahoma, she never imagined she'd end up there for good. after four years of college in LA, drummond was only making a pit stop home before moving to chicago. a chance encounter with a devastatingly masculine cowboy in a local bar changes everything. a rancher with deep roots in the land he works, marlboro man isn't going anywhere. so as drummond decides to marry the love of her life and discover what being a rancher's wife will entail. charming and bright, drummond's story will be an inspiration to those who despair of finding old-fashioned, lasting love.

by reading reviews, i have found that apparently if you've been a long-time follower of ree's blog, you will only find about 85 pages of new material.
(thankfully, i recently discovered her and it was all new to me).

my only complaint is that ree seemed repetitive at times and she would go into much detail about some things (like her wedding) but breezes through other times (like after her daughter is born). im hoping she will write a part 2 to the story... since she now has 4 children, i am sure there is so much more to tell!

overall, i found ree to be seriously funny, honest, and refreshing.
i recommend you read it if you are a sucker for a sweet romance ;)
(and don't worry, she keeps it classy)

oh, and you should check out ree's show on the food network (it comes on saturday mornings) she tells a little about her life on the ranch, and gives a couple of yummy recipes per show.

today i have a heavy heart.

i cant believe it has been ten years.
a whole decade
since 9/11.

i was a freshman in high school on september 11th.
in my first period algebra class
when i first heard of the attacks on the world trade center.

as we would hear bits of information throughout the day,
i remember feeling confused, scared and uneasy.

it wasnt until i got home from school that i was able to watch for myself
and begin to comprehend the reality of what had happened.
i remember standing in front of the living room tv
watching in disbelief.

they repeatedly played footage of the planes hitting the twin towers, and then collapsing.
we were obviously under terrorist attack.
and i was scared.
what did this meant for the future of our country?

the pictures are engrained in my memory forever.
my heart still breaks for those who have lost loved ones.
i will never forget september 11, 2001.

Thank you to all of our military, first responders, firefighters and police
 who risk their lives for the safety of others.
i am amazed by your bravery.

and forever thankful to live in the USA.
